Ingredients:

- 1 pack extra firm or frozen tofu, squeezed , broken into bite-sized pieces

- 3 green onion, cut into long strips

- 2 cup basil leaves, loosely packed (Holy Basil if available, or regular basil)

- 5 large cloves of garlic, finely chopped

- 1 birds eye or Thai chili deseeded and finely chopped

- 2 tbsp oil

Sauce:

- 1 tbsp vegan oyster sauce

- 2 tbsp abc soy sauce

- 1 tbsp dark soy sauce (or all-purpose)

- 1 tsp sugar

- 1/4 cup water

Directions:

1. Combine sauce ingredients in a small bowl.

2. Heat oil in a wok or pan over high heat.

3. Add garlic and chili, cook for 10 seconds (avoid inhaling chili fumes).

4. Add tofu and some of the green onions, fry until cooked (around 2 min).

5. Add sauce, cook for 1 min until water evaporates, creating a thick glossy sauce.

6. Remove from heat, toss through green part of green onions and basil leaves. Stir until just wilted, then serve immediately with rice.
